Mulligan Stew with Ground Beef

Ingredients:

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 potatoes, diced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups beef broth
  • 1 cup frozen corn
  • 1 cup frozen peas
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Directions:

  1. In a large pot or Dutch oven, brown the ground beef over medium heat, breaking it up with a spoon, until no longer pink. Drain any excess fat.
  2. Add the chopped onion and minced garlic to the pot with the ground beef. Cook until the onion is translucent, about 2-3 minutes.
  3. Stir in the diced carrots and potatoes, and cook for another 5 minutes, until slightly softened.
  4. Pour in the diced tomatoes and beef broth, and add the dried thyme and rosemary. Season with salt and pepper to taste.
  5. Bring the stew to a boil, then reduce the heat to low and let it simmer for about 20-25 minutes, until the vegetables are tender.
  6. Stir in the frozen corn and peas, and simmer for an additional 5 minutes until heated through.
  7. Taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.
