Baked Oatmeal Cups
Ingredients:
- 2 cups rolled oats
- 1 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1 ripe banana, mashed
- 1 cup milk (dairy or plant-based)
- 1/4 cup honey or maple syrup
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup chopped nuts or seeds (optional)
- 1/2 cup fresh berries or diced fruit (optional)
- Cooking spray or paper liners
Directions:
- Preheat your oven to 350°F (175°C). Grease a muffin tin with cooking spray or line with paper liners.
- In a large bowl, mix together the rolled oats, baking powder, cinnamon, and salt.
- In another bowl, whisk together the mashed banana, milk, honey or maple syrup, egg, and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients and stir until everything is evenly combined. If desired, fold in chopped nuts or seeds and fresh berries or diced fruit.
- Divide the oatmeal mixture evenly among the muffin cups, filling each about 3/4 full.
- Bake in the preheated oven for 20-25 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.
- Allow the oatmeal cups to cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.
- Once cooled, store the oatmeal cups in an airtight container in the refrigerator for up to one week. They can also be frozen for longer storage.
